Leftover Lasagna !! Yes,  look like that 🙂

What you need :

  • Bolognese sauce(recipes will come) or any Marinara sauce, tomato sauce. I had some left over of a bolognese sauce i made during the week and some Gusta italian sausage . I add the sausage to the sauce . IT was really good !
  • Vegan Ricotta{Cashews}
  • Whole wheat Lasagna ( or any lasagna of your choice ) Usually they all take 35-45 minutes to cook in the oven .
  • Grilled veggies (Zucchini, eggplants, red pepper ,mushrooms) AS YOU WISH !! On a pan with aluminium foil !! Grill @ Broil with olive oil and spices (the one you want )Take about 5 minutes each side …not too much … You don’t to over cook them just to put a bit of color .Once a week i make some grilled veggies . For my sandwich or pasta . You can use for absolutely anything ! img_3863
  • Spinach , dont need to be cook!
  • Daiya mozzacheese (really good for melting cheese)Daiya-Shreds-Cutting-Board-Mozzarella-Style_US_500x500
  • and parmesan (Avril they have good one)


  1. Preheat oven to 350F.
  2. Cover bottom of lasagna pan with sauce .
  3. Layer with lasagne noodles, trimming to fit, if needed.
  4. Put the veggies and add some sauce on it .
  5. Layer with lasagne noodles again
  6. Cover the lasagne with the Ricotta cheese. Make it tick ! 1/2 inch at least and add a bit of sauce on top.
  7. Layer with lasagne noodles.
  8. Put some sauce again !!
  9. layer some spinach and cover them with the rest of grilled veggies .
  10. Layer with lasagne noodles.
  11. Finish with sauce (a lot of sauce) Top with Daiya Mozzarella and you can mix it with some vegan parmesan .
  12. Cover with aluminium foil and cook for 45-50 minutes .(Check what pasta box says )
  13. Finish  at broil ( make sure you keep an eye on it ) couples of minutes (2-3)  Vegan cheese doesn’t really broil…
