Vegan Ricotta {Cashews}

Lasagna with no ricotta ..No way !!!

There no vegan ricotta anywhere so i decide to make my own Ricotta . SO EASY , its a joke !  OMG! WOW !

Here the RECIPE:

I Boiled 2 Cups of Cashews raw for 15-20 minutes. I didn’t have time to soak them for 3 hours.

Mean time in the food processor :

  • 2-3 garlic gloves
  • 4 TBSP of Lemon juice
  • 1\4 Cashews milk or any noon-dairy milk
  • 1 TBSP of Maple Syrup or Agave syrup
  • 1\2 TBSP of dry basil and 1\2 TBSP dy oregano
  • 1\4 TBSP onion powder
  • 1 TBSP of olive oil
  • salt and peppers

Drain the cashews and add them into the food processor .

Process until smooth or you have the texture you want . You may have to add a bit of cashew milk if its too dry .  Can take up to 4-5 minutes.

SO SIMPLE !
