Vegan Tofu Ramen soup !

❤️ Good for 4 big bowls
30-45 min **************


1 Tablespoon of olive oil
1 onion diced
3 garlic gloves, minced
1 tablespoon of grated ginger
Cook until tender in a large stockpot 🌱🌱🌱🌱
Stir 3 tablespoon of red curry paste
1 table spoon of Mirin sauce
1 tablespoon of sambal oelek, if you want spicy 🌶
Cook for 1 minute
Add 6 cups of vegetables stock
And half a can of coconut milk
Bring to boil; reduce to heat and cook

Half a bloc of tofu diced
1 carrot sliced
1/2 cup of cilantro
Stir into the stock and let it cook for 10 minutes
I grilled 2 big bok choy cut into 4 pieces and couples of mushrooms with a bit of sesame oil .
Bbq or even at broil in the oven for couples of minutes 🍄🍄🍄 Remove the stock from heat , add some lime juice of 1 lime season with salt and pepper, to taste !
2 pack of ramen noodles not cook
Share into 4 bowls ;
1 hand of spinach in each bowl
Add the grilled veggies , green onion , cilantro and the stock with the tofu and carrots !
Wait 3-4 minutes until the ramen noodle are ready 🍜🍜🍜🍜
