Indian food is definitely my favorite food ever .
SPICES, VEGETABLES , CHICKPEAS , LENTILS ,TOFU WHATEVER YOU FEEL YOU CAN MAKE IT ”INDIAN STYLE” 💚 I make at least once a week Indian food . A lot of recipe are gonna be posted in here but Let’s start with this one …
- Olive oil
- 1 large onion finely chopped
- 3 garlic cloves crushed
- 1/2 tsp ground cumin
- 1 tsp ginger grated
- 3 tsp Indian curry powder.
- 1 cup of each (chopped small): cauliflower, zucchini (can be sweet potato or any vegetable you wanna eat in there)
- 1/2 red pepper
- 1 cup red lentils.
- 2 tsp ground turmeric.
- 3 cups vegetable stock (liquid)
- 1 cup of spinach chopped
- 1/2 cup of coconut milk (light)
- Cilantro for topping
- Naan bread 😍
If you want it spicy🌶🌶🌶🌶🌶 you can add 1 jalapeno chopped or any spicy pepper, pepper flakes.. Even Cayenne pepper powder would work … you know what i mean !
Fry the onion, garlic, ginger in the olive oil until the onions are soft.
Add the lentils, curry powder and turmeric (spicy choice if you have one)and fry for two minutes, stirring continuously.
Add the Cauliflower , red pepper and the Zucchini stir for 2-3 minutes . Pour in stock and the coconut milk.
That’s where you add the spice and you taste ?! you see if you have enough curry powder or spices (spicy)…salt and pepper .Cook for about 30 minutes on low heat, stirring occasionally, make sure the dahl does not stick . Add more water or stock if required.
Add the spinach let them cook for 5 minutes and it’s ready 🙂
Topp with a lot of Cilantro
